Hi Game,
I am glad you are still remembering your Chinese that you had picked up while you were in Thailand.
I am fortunate to have lived in a country where there are at least 7 spoken dialects.
I know about 5 and I will give the correct translation below:

Gong Hei Fa Choi = happy new year (cantonese)
More correctly:
Gong Hei = wishes for
Fa Choi = Prosperity (luck, wealth, health, new births etc)

Sin Ni Huad Cai = happy new year (Fujianese)
More correctly:
Sin = New
Ni = Year
Huad = propsering with
Cai = Wealth
